Charnwood Training Group chef apprentice lands Michelin-starred work experience
Charnwood Training Group chef apprentice Conan Brooks landed a week-long work experience at Raymond Blanc’s two Michelin-starred restaurant and hotel, Le Manoir aux Quat’Saisons in Oxfordshire.
Brooks has been studying on-the-job for his Level 2 Award in Professional Cookery whilst working at the Charnwood Academy in Kirkby in Ashfield, Notts, since September 2012. The work experience opportunity came about when Brooks responded to a tweet from Le Manoir offering placements.
Brooks’ mentor for the week was Rhodri Williams, sous chef Tournant at Le Manoir, where he’s been working for nine years. On Brooks’ first day, he was impressed with the slick way the kitchen operates but he found the range of equipment a little overwhelming, saying: “I’ve never even seen most of the equipment Rhodri has shown me, let alone used it. I didn’t realise kitchen equipment varied so much and I can’t wait to get stuck in.”
Brooks blogged, tweeted and uploaded pictures of his time at Le Manoir on a daily basis, including summarising the new skills he had picked up and how he could take them away and put them into practice.
Williams was impressed with his young protégé: “Conan has proved to be calm, diligent and follow direction well. He has shown great promise throughout his work experience with us and we wish him the best of luck for the future.”
