Eat Out with... Simon Brigg, Porky's BBQ

Porky’s BBQ is the brainchild of husband and wife team, Simon and Joy Brigg, who developed the concept following their travels around America.

The concept prides itself on its Memphis-style barbecue dishes, Americana-inspired cocktails and a wide selection of bourbons and rye whiskies, as well as craft beers.

The London group currently has five restaurants, with big plans to roll out. Maria Bracken met with Simon to find out what makes their concept stand out from the crowd.
