Brasserie Blanc, the French restaurant group led by chef Raymond Blanc, is to open its 20th site in the Highcliff Marriott Hotel, Bournemouth.

Brasserie Blanc, the French restaurant group led by chef Raymond Blanc, is to opening its 20th site in the Highcliff Marriott Hotel, Bournemouth.

The site, the first Brasserie Blanc to open in a hotel, will cover 3,500 sq ft and provide space for 108 covers, with a 70-cover bar and 42 covers on the terrace.

Mark Derry, chief executive of Brasserie Blanc, said: “We are delighted to be opening our 20th site and partnering with Marriott to launch Brasserie Blanc in Bournemouth.

“This is an exciting new phase for Brasserie Blanc’s development. The bar, brasserie and terrace will be absolutely stunning and this is an exciting opportunity for us to scale up and run the full F&B for the 160-room hotel.”

The restaurant will offer both classic and modern French dishes created by executive chef Clive Fretwell. Dishes include beef bourguignon, king scallops provencale and ‘le grande’ steak frites.

The Marriot partnership will see Brasserie Blanc seek further opportunities in the hotel sector.
