Kitty Fisher ex-head chef to open first restaurant with Smoking Goat founders

Ex Kitty Fisher head chef Tomos Parry is to open his first restaurant, ‘Brat,’ in Shoreditch this spring, in partnership with the Smoking Goat founders.

Drawing on his Welsh heritage – ‘Brat’ a colloquial term for turbot – and the Basque region of Northern Spain, Parry will use seasonal British produce and cook on an open fire wood grill, to recreate the Spaniards “relaxed, intuitive and direct approach to cooking”.

He said: “Brat will focus on a particularly gentle and simple style of fire cooking recognisable from Getaria (Basque), which generally means buy well and don’t ruin it. Since leaving Kitty’s, I’ve been working closely with farmers and fisherman to create a menu which is structured around native ingredients at the peak of their season.”

Working with farms to source and select ingredients, dishes will include starters such as Carmarthen ham and fresh cheese, and main dishes of cedar wood sea trout; slow grilled little red mullet; wild mussel and cockle soup and a Welsh-inspired Offal hot pot. Accompanying the food will be an “approachable” wine list created in collaboration with new wine import company, Keeling Andrew & Co - from the founders of wine importer Noble Rot.

Situated above Smoking Goat’s new Shoreditch site, Parry said that the partnership with Ben Chapman and Brian Hannon – co-founders of London restaurants the Smoking Goat and Kiln – “came about through a long-standing friendship with Chapman,” while speaking to Big Hospitality.

“I’ve known Ben for many years. We used to chat about restaurants and have very similar tastes. When I left Kitty Fisher’s to open my own place, Ben had a spare couple of months and before I knew it, we decided to do something together… it felt like a natural progression.” 

Parry will take control of the food and menus while Chapman and Hannon support the day-to-day running, the latter adding: “I think the benefits of smaller restaurant ventures working together is in bringing together our collective experience and knowledge. We share ownership of Kiln and Smoking Goat with key team members …so working in this way on Brat is a natural progression for us.”
